This move matters because fast grocery is a bigger basket, a more frequent habit, and a tighter fit with dense Latin American cities than restaurant delivery alone. A dark store that holds pet food, pharmacy items, snacks, and pantry staples can win orders all day, not just lunch and dinner. That gives CloudKitchens a way to use the same real estate and dispatch logic against a much larger pool of everyday spend.

  • Latin American grocery spend is far larger than online restaurant delivery, and grocery still happens mostly offline. Prior research on Rappi cites Euromonitor showing online food delivery GMV at $6B in 2020, while grocery and CPG make up more than half of retail spend. McKinsey describes physical stores as nearly 90% of grocery spending in the region, which leaves a large pool to digitize.
  • The dark store play works by stocking a small warehouse near demand, then pushing 15 minute orders through delivery apps. Pik N' Pak says it integrates with Uber Eats, Rappi, Cornershop, and Didi Food. That means CloudKitchens is not waiting to build consumer demand from scratch, it can plug inventory into apps that already own traffic and courier supply.
  • Comparable operators in the region have already shown why the category mix matters. JOKR focused on broad grocery assortment and reliable sub 15 minute fulfillment in underserved Latin American neighborhoods. Rappi expanded from food into grocery, pharmacy, and convenience, and its current Turbo offering spans multiple countries. The pattern is that food delivery networks become much more valuable once they sell everyday essentials, not just prepared meals.

The next step is a blended local commerce network where kitchen sites, dark stores, and delivery marketplaces feed each other. If CloudKitchens keeps extending from meals into convenience, each site becomes more productive, each courier trip carries more demand, and the company moves closer to being local retail infrastructure rather than only a restaurant landlord.
